- 1 1/2 cups whole wheat pastry flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup butter, softened
- zest of 1 lemon
- 1/2 cup milk
- 3/4 cup fresh blueberries
- In a large bowl, whisk flour, baking soda, baking powder, salt, and sugar to combine. Add zest, berries, milk, and butter. Mix well, (using your hands to mix is easiest).
- Form dough into 6 to 8 rounds and flatten slightly. Place on a parchment lined baking sheet, (if desired, brush with milk, and top with a sprinkle of sugar.)
- Bake in a preheated 400 degree oven for 13-15 minutes or until golden.
